Deconstructed Strawberry Shortcake

Here’s our fun food #2 for your 4th of July celebrations. It’s a red, white and blue deconstructed strawberry shortcake with a sweet twist…we added donut holes instead of cake! Another element that adds to the palette pleasing flavor is real whipped cream. It’s so simple to make and remember…fresh is the best.

This sweet dessert is so yummy and fun to eat…we think anything on a stick screams fun to eat!

Ingredients

  • 12 Donut holes
  • 1 Cup Whipping cream
  • 2 Tbl powdered sugar
  • 1 Small container Strawberries
  • 1 Small container Blue berries
  • Mini muffin cups
  • 12 skewers

Procedure

  1. Wash, clean and cut the stems off your strawberries, make sure you cut a flat surface to add a donut hole.
  2. Mix your whipping cream and powder sugar on high speed, about 5-8 minutes until you get stiff peaks when you pull your beaters out of the whipping cream. You want your whipping cream to be stiffer than normal to hold the blue berries. Hint, the level of sweet is up to you…not sweet enough for you add a little more powdered sugar.
  3. Put whipping cream in a piping bag with medium tip. If you don’t have a piping bag you can use a baggie and snip a small piece of the corner end off.
  4. Start assemble with a whipped cream topped donut hole. We found it easiest to pipe the whipped cream on the donut hole and then slide it onto the skewer.
  5. Next layer on a strawberry and another donut hole with whipped cream and then add blue berries.
  6. Put each deconstructed strawberry short cake in a mini muffin cup.  For additional stability add donut holes, strawberries and blueberries to your serving plate to help your deconstructed strawberry shortcakes stand up.
