It’s hard to believe St. Patrick’s Day just got over and now we are moving on to Easter. Can you believe Easter is in 2 weeks? What we’re all ready for is some springtime sunshine and warmer weather. We’re going to spring into our Easter treats with our chocolate peanut butter Easter egg crackers. We get excited anytime chocolate and peanut butter are paired together and when they look as sweet as these Easter eggs…who could resist them? For this project we used Ghirardelli Melting wafers. If you followed us during Halloween and the Christmas holidays you know we are IN LOVE with Ghirardelli Melting wafers!! We love the creamy smooth texture, the ease of melting and the wonderful flavor. We think it is superior to the different varieties of candy bark you will find in the grocery stores. We can always find these at Wal-Mart.
Chocolate Peanut Butter Easter Egg Crackers
Ingredients
- Town House Crackers
- Plain Peanut Butter
- Ghirardelli Milk Chocolate Melting wafers
- Ghirardelli White Chocolate Melting wafers
- Assorted Colors of Candy Melts
- Sucker Sticks
- Parchment Paper or waxed paper
Directions
Spread the peanut butter on one cracker; lay the sucker stick in the center of the cracker so that it covers the entire length of the cracker. This is important as it helps supports the cracker as you dip it in the chocolate. Take another cracker and add a small amount of peanut butter to it and place it onto the other cracker forming a “sandwich.” Go ahead and prepare 15-20 cracker sandwiches before you begin to prepare your chocolate.
Decide how many cracker sandwiches you want to dip in the white chocolate and how many you want to make to dip in the milk chocolate. You will want to work with one chocolate at a time so nothing has a chance to set up before you are finished dipping your entire batch of cracker sandwiches.
Follow the package directions for melting your chocolate. You will want it to be fairly loose and runny. This will make it easier to coat and work with your cracker sandwiches.
We found it easiest to coat our cracker sandwich with the chocolate by tilting the bowl at an angle so we could lay the cracker in the melted chocolate covering the entire cracker. Set the bowl down and slowly pull the cracker sandwich out of the bowl allowing some of the excess chocolate to drip off.
Place the chocolate covered cracker sandwich on parchment for the chocolate to set up. You can also put them in the refrigerator to speed up the setting up process and getting them ready to decorate.
If you try dunking the cracker sandwich in an up and down motion you’re likely to pull the sucker stick out of the cracker sandwich…trust us we tried.
To decorate them we purchased Wilton candy melts. You can pick these up at Wal-Mart or at any craft store. We choose to use three different colors and melted about 1/4 of the bag according to the package directions. Let it cool for a few minutes and then put them in pastry bags to pipe them on your cracker sandwiches. If you don’t have any cake decorating supplies don’t worry, just put them in a heavy zip lock baggie and cut off a very small corner of the baggie and you’re ready to decorate.
Decorating is the fun part, so be creative and enjoy putting your signature touch on each one of chocolate peanut butter Easter eggs.
