Honey Dijon Chicken and Rice

Our honey Dijon chicken and rice delivers just that, mouth watering flavor and satisfaction without a lot of prep work. The best part about this recipe…it’s great for left over’s the next day and we love leftovers.
This recipe is perfect for sharing with friends. To make your weekend dinner complete just add a fresh garden salad and a yummy vegetable, like fresh green beans or broccoli and your dinner will impress those guests. We bet you even get asked for your recipe. When we made this honey Dijon chicken and rice in our Dinner4Two kitchen it was gobbled up in nano seconds and everyone wanted more. Depending on the number of guest you’ll be serving just double the ingredients for the honey Dijon chicken and rice.
Honey Dijon Chicken
- 5-6 Chicken Thighs
- Salt and Pepper to taste
- ¼ Cup of honey
- 3 Tbsp Dijon mustard
- 2 Tbsp olive oil
- 2 Tbsp Red Wine Vinegar
- 1/8 Cup Chopped Pecans
Rice
- 1 Cup White Rice
- 1 ½ Cup Chicken broth
- Cooking time White rice 16 minutes
- Cooking time Brown rice 25 minutes
Directions for cooking rice
Add rice and chicken broth to 1.5 quart sauce pan, give it a stir. Turn heat to medium add lid with Redy-cook Valve open. When Redy-cook valve whistles, close valve, turn heat to medium, cook for an additional 16 minutes.
Directions for cooking Chicken
- Season chicken with a few pinches of salt and pepper, set aside until skillet is pre-heated.
- In a small bowl combine the honey, mustard, olive oil and red wine vinegar; whisk all ingredients and set aside.
- Pre-heat skillet on medium high for 3 minutes; when the water beads up and dances around your Kitchen Charm skillet is ready.
- Add chicken to skillet and sear for 5 minutes with lid ajar. This will achieve a beautiful golden brown caramelization on the chicken.
- Turn Chicken over and lower heat to medium. Pour Honey mustard mixture over the top of the chicken. Add lid flat with Redy-cook valve closed and cook for an additional 7 minutes.
- Before serving add chopped pecans.
