Salmon with Mashed Corn

Salmon Ingredients:

  • ¾ pound fresh salmon
  • 1/8 cup green onion, minced
  • ½ clove garlic, minced
  • ½ carrot, cut into strips
  • ½ cup white wine
  • ½ red pepper, cut into strips
  • ½ tablespoon balsamic vinegar
  • ½ tablespoon granulated sugar
  • ½ ripe tomato, chopped
  • 1/8 cup lime juice
  • Salt and black pepper to taste

Mashed Corn Ingredients:

  • 1 ½ cups water
  • 1/8 cup skim milk
  • ½ cup yellow cornmeal (polenta)
  • 1/8 cup onion, minced
  • 1 basil leaf
  • Salt to taste

Salmon Procedure: With the Chef’s Knife, cut vegetables as directed. Season salmon with salt and pepper. Preheat the 10-inch Gourmet Skillet at medium-high heat. Sear salmon for 2 minutes on each side. Remove from skillet. Simmer green onion and garlic for 2 minutes. Add carrot, wine, peppers, balsamic vinegar, sugar, tomato, and lime juice. Place salmon back into pan; reduce heat to low. Cover and simmer for 3 minutes. Serve with the Mashed Corn.

Mashed Corn Procedure: In the 8-inch Skillet add water and milk. Cook at medium-high temperature with the Redy-cook valve open. When the valve whistles, add the yellow cornmeal and onion. Reduce heat to low. Add basil and salt to taste. Cook for 10 minutes and turn off stove.
