Lite Salad

Culinary Tools:

  • Chef’s Knife
  • 5-quart Mixing Bowl

Ingredients:

  • 1 cup watermelon, peeled and thinly diced
  • 1 cup cantaloupe, peeled and thinly diced
  • 1 cup cucumber, skin on and half-moon sliced
  • 1/8 cup mint, chopped
  • 2 cups baby arugula 
  • ½  cup cashews
  • 1/8 cup olive oil
  • 1/8 cup lime juice, freshly squeezed
  • ½ cup goat cheese, crumbled
  • Salt to taste

Procedure:

Using the Chef’s Knife, cut the fruits and vegetables as directed. In the 5-quart Mixing Bowl, combine all the ingredients well. Season with salt and top with crumbled goat cheese.
