Ingredients:
- 4 ripe tomatoes; diced
- 1 red onion; diced
- 2 cloves of garlic; minced
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 4 fresh basil leaves
- ½ French baguette; cut into ¾” slices
- Salt and pepper to taste
Procedure:
Slice French baguette into ¾” slices. Rub each slice with garlic and toast under the broiler for 1-2 minutes.
Combine all ingredients (except basil) into your 3 quart Mixing Bowl. Mix well; then add basil into the mixture. Place the lid on your 3 quart Mixing Bowl and refrigerate for 30 minutes.
Spoon ingredients onto bread and serve.
Chef’s Note: You may shave parmigano reggiano on top or drizzle with white truffle oil for extra flavor!
