We asked our Chefs why 95% of all recipes call for salt. This was Food Network Chopped Champion Chef Joe Rego’s reply, “It’s the quintessential flavor engine. The question is… to use good natural sea salt.” Chef Hummel had this to say, “It brings out and enhances the natural flavors of foods. There are so many great salts to choose from to enhance your dishes’ flavor.” Chef Warren said, “you should add salt in the beginning of your cooking process to give it the opportunity to work its’ magic and then add a finishing salt to complete the seasoning process.”
There are so many salts to choose from; finishing salts, Fleur De Sel, Sel Gris, Flake salt, flavored & infused sea salts, smoked sea salt and salt blocks just to name a few. All these choices left us confused. We love this site, The Meadow, it spells it out nicely and in terms we can understand and appreciate.
