Chef David’s Simple Pesto Sauce
Pesto Sauce Ingredients:
- 3 cloves garlic
- 4 tablespoons extra virgin olive oil
- 4 ounces pine nuts
- 4 ounces grated Parmigano Reggiano
- 2 bunches fresh basil
- ½ cup cream (optional)
- Kosher salt and pepper to taste
Pesto Sauce Procedure:
Combine all ingredients in a blender and pulse 7 to 10 times; or to a consistency of your liking.
Chef David’s pesto sauce is great on pasta, but it also adds the perfect flavor to fish or Chef David’s bruschetta!
Chef David’s Alfredo Sauce
Alfred Sauce Ingredients:
- 1 clove garlic; smashed
- 1 cup heavy cream
- 1 cup Parmigano Reggiano; grated
- 4 Anise seeds (optional)
- 1 pinch kosher salt
Alfredo Sauce Procedure:
Add all ingredients except cheese to you 3 quart saucepan. Bring to a simmer and cook for 20 minutes (do not boil). Add cheese two tablespoons at a time until all the cheese is melted into the cream sauce. Cook for approximately 5 more minutes and strain.
Toss sauce with your pasta of choice!
