- 12 ounces shredded imitation crab meat
- 1 (14-ounce) can artichoke hearts, stem removed and diced
- ½ cup red bell pepper, small diced
- ½ cup green bell pepper, small diced
- ¼ cup cilantro, minced
- 1 tablespoon jalapeño pepper, seeded and minced
- ¼ cup low-fat mayonnaise
- 1 tablespoon lime juice, freshly squeezed
- 1 (4-ounce) pack water crackers
- Salt and black pepper to taste
- Cut vegetables as directed.
- In the bowl, combine all ingredients, except crackers.
- Serve immediately with water crackers.
