Peanut Butter Cookie Cups

Peanut Butter Cookies
  • 2 1/2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/2 cup unsalted butter
  • 1/2 cup shortening
  • 1 cup creamy peanut butter
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 -2 cups granulated sugar to roll cookie balls in before cooking
  • 1 bag Bite Size Reese’s Peanut Butter Cups (unwrapped)
Preheat the oven to 350.  Stir together dry ingredients.  In a mixer cream butter, shortening, and peanut butter until smooth.  Add the sugars and keep mixing until well blended.  Add eggs and then vanilla.  Add flour in two parts and mix until combined.
Shape dough into balls, roll in granulated sugar and place in a mini muffin pan. Bake for 8-10 minutes. Immediately after you take them out of the oven place 1 Reese’s cup in each cookie and gently push them down.  Let them cool. Remove from muffin tin and place on plate for serving.
