- ½ pound skirt steak
- ½ cup apple, sliced
- 1 cups roman lettuce, chopped
- 2 whole wheat pitas
- ¼ cup low-fat feta cheese, crumbled
- ¼ cup low-fat mozzarella cheese, shredded
- Salt and black pepper to taste
Preheat the Round Grill at medium-high heat. Season the skirt steak with salt and pepper to taste. Turn heat to medium and cook the steak on each side for 4 minutes, for medium rare; 6 minutes each side for medium; or 10 minutes each side for well-done. Remove steak from the grill and let rest.
Using the Chef’s Knife, slice the apple and chop the roman lettuce. Using the Carving Knife, thinly slice the skirt steak against the grain. On 1 of the pita breads, layer feta, apples, steak, lettuce and mozzarella cheese; top with the remaining pita slice.
Preheat clean Square Griddle at medium-high heat for 2 minutes. Turn heat to medium-low, place pita sandwiches and cook on each side for 5 minutes. Remove from the griddle, cut in half and serve.
