Kid Friendly Halloween Treats

Hummus with Carrot Fingers

Culinary Tools:

  • 8-inch Gourmet Skillet
  • maXtractor™
  • 3-quart Mixing Bowl

Ingredients:

  • 1 pound chickpeas, cooked or canned
  • 2 ounces pine nuts
  • 2 cloves garlic
  • 2 limes, peeled and halved
  • ¼ cup olive oil
  • ½ pound carrot, tops removed
  • ½ pound celery
  • ¼ cup sliced almonds (garnish)
  • Salt to taste

Procedure:

  1. Add pine nuts to 8-inch Gourmet Skillet and toast them at medium-high heat for about 3 minutes, while constantly stirring.
  2. In this same order, pass half of the chickpeas, pine nuts, garlic, remaining chickpeas and lime through the maXtractor™.
  3. Transfer content from both containers to 3-quart Mixing Bowl. Add the olive oil and salt to taste; stir well.
  4. Garnish hummus with carrot “fingers”. Serve with celery sticks and your favorite vegetables.

Chef’s Note: If you use canned chickpeas to make the hummus, place them first in the Junior Steamer/Colander and rinse them under cold running water to reduce excess sodium.

Mummy Pizzas

Culinary Tools:

  • Bread Knife
  • Bamboo Cutting Board
  • 2-quart Saucepan
  • maXtractor™
  • Whisk
  • Double Griddle

Marinara Sauce Ingredients:

  • 2 Roma tomatoes
    ½ cup celery, small chopped
  • ½ cup carrot, small cubed
  • ¼ yellow onion, chopped
  • 1teaspoon garlic, minced
  • Salt and black pepper to taste

Pizza Ingredients:

  • 1 pinch oregano
  • English muffins, halved
  • string cheese, shredded
  • 10 green olives, pitted and halved

Procedure:

  1. In the 2-quart Saucepan, add all the marinara sauce ingredients. Cook without covering at medium-high heat for 8 minutes; stir occasionally with the Whisk.
  2. Pass cooked ingredients through the maXtractor™. Return sauce to the saucepan and cook without covering at low heat for 6 more minutes; stir occasionally.
  3. Preheat the oven at 350 ºF for 5 minutes. Place the halved English muffins on the Double Griddle, top with marinara sauce. Place two olive halves on each muffin to form mummy’s eyes and cover the rest of the muffins with cheese strips.
  4. Bake for 15 minutes, or until cheese starts melting. Serve immediately.
