Ingredients:
- ½ cup red bell pepper, diced
- ½ cup orange bell pepper, diced
- ½ cup green bell peppers, diced
- ½ cup green onion, thinly sliced
- ½ cup fresh cilantro, chopped
- 1 cup corn, fresh
- 1 tablespoon smoked paprika
- 1 tablespoon ground cumin
- ½ cup farmer’s cheese, crumbled
- Non-stick spray oil
Procedure:
Using the Chef’s Knife cut peppers, onion and cilantro according to directions. Preheat the 12-inch Gourmet Skillet at medium heat for 3 minutes; lightly coat skillet with non-stick spray oil. Add corn and cook for 5 minutes while stirring. Add smoked paprika and cumin; mix well and let cook for 2 minutes or until you are able to smell the spices toasting. Add remaining ingredients and cook for 3 minutes while stirring. Serve warm with tortilla chips or as a side dish.
