1 1/3 cups Flour
1/2 cup Brown Sugar
3/4 cup Sugar, divided
2 sticks cold Unsalted Butter, cut into pieces
1 cup Old Fashioned Oats
1/2 cup Mini Chocolate Chips
1 8oz pkg of Cream Cheese, Softened
1-15 oz can Pumpkin
1 tablespoon Pumpkin Pie Spice
Preheat oven to 350 degrees. Spray or grease a 13×9 baking dish.
Mix flour, brown sugar and 1/4 cup of the sugar with the cold butter until it resembles a crumb mixture. Mix in oats and mini chocolate chips. Remove 1 cup of the mixture and press the rest into the bottom of your greased pan. Bake for 15 minutes.
While the crust is baking make the cheesecake filling. Beat your cream cheese until smooth and creamy. Add the eggs, pumpkin and pumpkin pie spice – blend well. Pour mixture over the crust when it comes out. Sprinkle the remaining cup of crumb mixture on top. Note: It will not cover the entire surface.
Bake for 30 minutes and let cool to room temperature. Once at room temperature, place in the fridge for a few hours to cool completely. Cut into bars and enjoy!
