Football Food

Do you love fall, football & food? When you combine these three elements you have football food. You know those small bites of yumminess you never tire of noshing on. It’s the perfect excuse to throw a pre-game tailgate party or have your friends gathered in your home to watch the game. One thing’s for sure, football food takes the game of being a spectator to the next level.

Dinner for two has a great trio of tried and true football food recipes for you to serve at your next football gathering, pulled pork sliders, cream cheese bacon wrapped jalapeños and football club sandwiches.

Our Pulled Pork Barbecue is super easy to make and freezes really well. This will save you time in the kitchen.  Pair these sliders with King’s Hawaiian Sweet Rolls and they add that little something extra in each bite, touch down. The pork is fork-tender; full of flavor and absolutely delicious. You can even add a little southern charm to the sliders by topping with your favorite coleslaw.

Easy Pulled Pork Barbecue Sliders

  • 1 6-8lb Boston butt Pork roast
  • 1/3 C Worchester sauce
  • 4 large garlic cloves
  • 2 packages King’s Hawaiian sweet rolls
  • ¼ – 1/2  bottle sweet Baby Ray’s barbecue sauce, original

Rub

  • 1 TBL Smoky Paprika
  • ¼ Cup dark brown sugar
  • 1 tsp coarse kosher salt
  • 1 tsp ground black pepper

Directions:

Make rub, combine smoky paprika, brown sugar, salt and pepper. Mix with a fork. Set aside.  Slice garlic into 10-12 slivers. Cut slits in pork roast and insert garlic slivers. Pat rub mixture on Pork roast. Add pork roast to 4 Qt pan. Add remaining rub on top of roast. Pour Worchester sauce over pork roast.

Place 4Qt on slow cooker base, cover with Redy-cook valve closed. Cook on high for 2 hours then reduce to medium, #3 for 3 hrs or cook on #2 for 6-7hrs. You can also cook this stove top for 4 hours on medium low. You know it’s done when you can easily shred the meat. Completely shred by pulling it apart with two forks. Let shredded pork sit in the juice for 5 -10 minutes to let it absorb all the juices.

If you use a bone in roast remove it and any fat that may remain. Add Sweet Baby Rays Barbecue sauce and stir. You may decide to add more Sweet Baby Ray’s, it’s all up to you; you’re the chef.

Cream Cheese Bacon Wrapped Jalapeños

What makes our cream cheese bacon wrapped jalapeños a football food party favorite is the balance between flavor and just a hint of heat. The cream cheese tames the flame in the jalapeños and leaves your mouth bursting with flavor.  You will want to make these little jems the day of to make sure they are warm and ready to serve

Cream Cheese Bacon Wrapped Jalapeños

Makes 20 Large- more if your jalapeños are small

Ingredients:

  • 10 Large jalapeños (if they are small i would get about 15)
  • 10 slices of bacon
  • 1 8oz package of cream cheese, softened
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cumin
  • 4Tbl water

Directions:

Cook bacon just before it becomes crispy in a 10” skillet. Set bacon aside. Drain off bacon grease and set skillet aside. When skillet is cool wipe it out with a paper towel; at this point don’t wash the skillet. Combine the spices and cream cheese. Use either a stand up mixer or a hand mixer to achieve a smooth creamy texture. Cut your jalapeños in half and remove the seeds. If you desire even less heat remove the ribs of the jalapeños as well. Fill each jalapeño half with cream cheese mixture.  Cut the bacon slices in half and lay across the top of each jalapeño. Turn heat to medium, add the water to the bottom of the skillet. Add jalapeños , put the lid on with Redy-cook valve open.  When Redi valve whistles close vent and cook for an additional 20 minutes.

Mini Club Football Sandwiches

The last and third in our trio of football food is the darling mini football club sandwiches. They are a perfect 2 bite nosh. This recipe really provides an opportunity for you to put your personal signature on it when it comes to your choice of ingredients and how you layer them on the sandwich. We give you basic ingredients and you add your creativity.

 Mini Club Football Sandwiches

  • Mini football cookie cutter
  • 15 slices sour dough bread – or your favorite
  • 15 slices cooked bacon
  • 15 slices deli turkey
  • 15 slices cheddar cheese
  • 4-5 large tomatoes sliced
  • Lettuce leaves
  • 2 Tbl Dijon mustard
  • ½ C Mayonnaise

Directions:

Mix the mayo and Dijon mustard, set aside. Cook bacon to desired doneness. We cooked ours crispy. Toast all your slices of bread. Cut bread and cheese, with mini football cookie cutter. Spread with mayo/Dijon mustard spread. Next, layer on turkey, cheese, bread, bacon, lettuce and tomato. Accent the tops of mini sandwiches with strips of bacon to complete the football food look.
