Mango Salsa
Sunshine, summer fun, backyard barbecues and grilling are in full swing and so is the joy of outdoor dining. We love sitting outside and sharing a meal with family and friends. Meals don’t have to be extravagant to be shared with friends.
We do think something in the menu needs to have the pop factor to it…That’s why we love our homemade mango salsa it adds the wow, this is delicious element to any dish! It’s bright, fresh and full of flavor. We love how versatile this salsa is also; you can serve it with chips as an appetizer or as a topping for grilled chicken, pork chops or even try it on fish. But what we really love to use it for is dressing up grilled hot dogs…talk about the YUM factor…it’s a total 10.
Ingredients:
- 2 Mangoes peeled, seeded and chopped
- 4 large Roma Tomatoes, chopped
- 2 large Garlic Cloves, minced
- Half a Medium Red Onion, chopped
- 5 Tbl Cilantro, chopped
- 1 Jalapeno Pepper, finely chopped (for less heat cut out ribs and seeds)
- 1 Anaheim Pepper, ribs and seeds removed and chopped
- 3 Tbl Lime Juice
- 3 Tbl Pineapple Juice
- 1 Tbl Olive Oil
- 1 Tsp Salt
Directions:
In a medium bowl combine mangoes, tomatoes, onion, jalapeno pepper and Anaheim pepper; set aside. In another bowl combine lime juice, pineapple juice, garlic, olive oil and salt. Mix both bowls together, cover and let sit in refrigerator for at least an hour.
Chef’s Notes: The longer the flavors have a chance to mingle the better and bolder the flavor. This also makes a great topping for grilled chicken, pork chops, fish and grilled hot dogs.
