Mashed Cheesy Garlic Cauliflower
Cauliflower is the new mashed potatoes…what? Yep, that’s right; recipes are popping up everywhere for this pile of delicious goodness on your plate. You have to try our mashed cheesy garlic cauliflower and then you’ll understand why. Let’s face it (for those of you who are honest with yourselves) we pass by the cauliflower in the produce section on a regular bases because it doesn’t scream out to us, have me for dinner tonight. We’d much rather plop in our grocery basket potatoes.
Let me tell you our mashed cheesy garlic cauliflower will rival any dish of potatoes you can put on the dinner table and the bonus is…you’ll be getting 60% fewer calories with wonderful cheesy savory garlic flavor; that is an absolute home run in our book. Go ahead and put our mashed cheesy garlic cauliflower in your weekly line up of delicious side dishes. Your family is going to love them! We love how the lowly cauliflower has gone from drab to fab with Chef’s super easy mouth-watering mashed cheesy garlic recipe.
- 1 head chopped cauliflower florets, no lower stems
- 8 ounces silken tofu
- 2 TBL butter
- 1/4 TSP garlic powder
- 3 Ounces sharp cheddar cheese
- ¼ Cup chopped chives
- Dash of salt and pepper to taste
Wash and chop cauliflower into small pieces. Be careful to only leave a small amount of stem.
In a 3 qt sauce pan add cauliflower and 3 rings of water. Turn heat to medium high add lid with Redy-cook valve open and wait for the whistle to sound, about 5 minutes. Close Redy-cook valve and cook for an additional 6 minutes or until cauliflower is soft.
In the Royal Vortex or blender add the tofu, cauliflower, cheddar cheese, butter, garlic powder, salt and pepper; in this order and blend on number 6 for 30 seconds.
Put in a bowl and top with chives.
