You can make this recipe ahead of time with a few simple modification. Make and brown your meatballs, turn heat off heat and set aside on a paper towel to drain. Drain off any excess fat from the skillet. Make the sauce. Return meatballs and the sauce to the skillet, do not turn the heat on. Stir to coat the meatballs with the sauce. Let this mixture cool down before adding it to a freezer safe container and to store in the freezer. If you make these  just a few days ahead of when you plan on serving them they will be fine in the fridge and ready for game day. Otherwise put them in a freeze container until you’re ready to use them. We actually make up a couple batches to have a nice supply on hand. When you’re ready for these delicious little bites pull them out of the freezer and thaw or remove them from the fridge and place in the 4 quart Kitchen Charm sauce pan with the lid on and the Redy-cook valve closed; place the pot on the crock pot base and turn heat to medium, cook for 1 hour. To keep the mini meatballs delicious and warm through out the game; turn heat down to the lowest setting and serve.

Sweet and Sour Mini Meatballs

Mini Meatball Ingredients:

  • 1 lb lean ground beef
  • 1 lb ground pork sausage
  • 1 Egg
  • 2 Tsp Worcestershire sauce
  • 1 clove minced garlic
  • 1 Tsp sea salt
  • ¼ Cup tablespoon finely chopped sweet onion
  • 1 Tsp cracked pepper
  • 1 Tsp chilli powder
  • 1 Cup rolled oats
  • ¾ Cup coconut milk

Sauce Ingredients:

  • 3/4 Cup balsamic vinegar
  • 3/4 Cup ketchup
  • 1/3 Cup brown sugar
  • 1/4 Cup honey
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp Dijon mustard
  • 1/4 Tsp garlic powder
  •  salt and pepper

Meatball Directions:

Combine all ingredients in a bowl. Shape into 1 1/2″ -2” meatballs. Preheat large skillet until water droplets bead up and dance around. Place in skillet and brown on all sides. Remove meatballs from skillet; drain off any fat. Return meatballs to the skillet, add the sauce, cover with the lid and Redy-cook valve closed. Simmer on medium low heat for 20 minutes or until sauce has a chance to thicken. To keep these warm and delicious throughout the party put them in a crock pot on low heat.

Sauce Directions:

In 2 quart saucepan add all the ingredients and bring to a boil over medium high heat. Add lid a jar; reduce heat to medium; simmer until thicken about 20-30 minutes. Stir every 5 minutes to make sure sauce doesn’t stick to the bottom of the pan. The sauce will become thick; the vinegar will lose a little of its bite for a very nice balanced savory flavor.
