Peanut Chicken Lettuce Wraps

Eating healthy doesn’t mean you have to sacrifice flavor or taste. These peanut chicken lettuce wraps are packed with delicious flavor that will make you think you have just dined at your favorite Chinese restaurant. They are full of satisfying chicken and veggies and topped with a delectable peanut sauce without hidden preservative.

When you finish eating these yummy jewels you’ll think you should feel guilty for enjoying them so much…when really they’re just great tasting healthy food. 

Another great thing about these lettuce wraps…you can easily substitute turkey in place of the chicken. Try this with some of your left over turkey from Thanksgiving; it’s equally delicious.

Peanut Chicken Lettuce Wraps

Ingredients:

  • 2 Chicken Breasts, chopped
  • Salt & pepper
  • 1 cup diced carrots – about 3 large diced
  • 1 large bell pepper or 4-6 small ones. We like the color and sweetness of the small sweet peppers. Seeded and Diced
  • 1 tablespoon sesame oil (or coconut)
  • Large leaf lettuce – we used butter lettuce

 

Peanut Sauce:

  • 1 1-inch piece ginger, peeled
  • 1 Garlic clove
  • ½ Cup creamy natural peanut butter
  • 1 TBL honey
  • 2 TBL soy sauce
  • 1 TSP rice vinegar
  • 1/3 Cup water
  • Juice from 1/2 lime

 

Sprinkle chicken breast with coarse kosher salt and cracked pepper. Let sit for 10 minutes.

In the 1.5 quart sauce pan turn heat to medium high add 4Tbls water, the diced carrots. Cover with Redy-cook valve open. Wait for Redy-cook valve to whistle and reduce heat to medium and cook for 15 minutes.

In an 8” skillet turn heat to medium high and let skillet heat up until surface is hot enough to bead water droplets. Brown and sear chicken breasts on both sides. Cover, close Redy-cook valve and cook until done about 10-13 minutes.

While the veggies and chicken are cooking make the sauce.  Put all ingredients into a blender and blend until smooth.

Once the chicken and carrots are done cooking combine them in the skillet and add the diced peppers. Pour the sauce over the chicken and veggies, mix until combined.  Leave on medium heat until the sauce warms up; just a few minutes. Spoon into in lettuce “bowls”.
