Artichoke Crab Salad

  • 5-quart Mixing Bowl
  • Solid Spoon (6-piece Kitchen Tool Set)

Ingredients:

  • 12 ounces shredded imitation crab meat
  • 1 (14-ounce) can artichoke hearts, stem removed and diced
  • ½ cup red bell pepper, small diced
  • ½ cup green bell pepper, small diced
  • ¼ cup cilantro, minced
  • 1 tablespoon jalapeño pepper, seeded and minced
  • ¼ cup low-fat mayonnaise
  • 1 tablespoon lime juice, freshly squeezed
  • 1 (4-ounce) pack water crackers
  • Salt and black pepper to taste

Procedure:

  1. Cut vegetables as directed.
  2. In the bowl, combine all ingredients, except crackers.
  3. Serve immediately with water crackers.
