Caprese Salad Bites
We call this classic summer dish…Caprese Salad Bites. What could be more fun and easy to serve for your next summer grill out this weekend! Remember…we think anything on a stick simply spells out fun. We wanted to dress up this yummy salad by deconstructing it into small bites and adding that OMG, Love It, gotta try it, won’t it look so cute sitting on my table look. It’s super easy and fast to whip up! Set out a small bowl of salt with a cute spoon, some good aged balsamic vinegar and olive oil for drizzling and you have just created a DIY mini salad station. Your family and guests will have fun, drizzling, sprinkling and eating your caprese salad bites. Between the fresh ripe tomatoes, basil, mozzarella, balsamic vinegar and a sprinkle of salt you have the perfect combination of summer flavors.
To add that extra flare and to coordinate with our ribbon we wrapped our tooth picks with coordinating Washi tape. We picked these tooth picks up at Target. For the planter pot you can use anyone you like. We used a new medium small clay pot. Next, stuff down in the pot a piece of Styrofoam. You may have to trim the Styrofoam just a bit before pushing it in your pot. You want your Styrofoam to fit snug so it doesn’t flop out of the pot when you add your caprese salad bites. Tie your ribbon around your pot. We put a couple of pieces of double stick tape on the inside of the ribbon to help it stay securely in place. Add some shredded crinkle paper and you are ready to add your caprese salad bites.
For your bites you will need cherry tomatoes, fresh basil leaves and mozzarella. We were able to find in the deli section at the grocery store little mozzarella balls. It looks like one large ball; if you examine it closer you will see it’s a conglomeration of little mini mozzarella balls. If you can’t find these just use whatever you can find in the deli. You may have to cut the mozzarella into small pieces to accommodate the size of your cherry tomatoes.
Cut your cherry tomatoes in half. Start with the rounded end of one half of the cherry tomato and layer it onto your tooth pick, the cut flat side of your cherry tomato will be facing up. Add a piece of mozzarella then a leaf of basil ( if the leave is large…fold it in half) and finish with your other half of cherry tomato making sure to put the cut flat side down on the basil…and there you have it…Caprese Salad Bites.
